With the dimension of the room, in order to have balance and symmetry, 2 works... 1 does not. No law says you can't change it... But I am a bit obsessive-compulsive (O.C.D.) and it messes with me if I don't have symmetry.

I think I know why-children used to be placed at the 'below the salt' in the dining room. Adults always were at the 'high table' and the kids at the low one.
Lovely Southern Mansion, Red! I always enjoyed seeing your pictures even if I don't download the lot. (although sometimes I think you should have a download of only the CC..but that's just me.)

Go Red! It is beautiful. I love the wallpaper in the formal dining room and I usually never use wallpaper! A lovely home for a big family.
