Is there anyway to make the globe bar act like a normal bar with all drinks being available?

AFAIK you would either need to build off a 2-tile bar and shrink it down from there, or futz around with object tuning, both of which are things outside my comfort zone. I like this bar cart from Ravasheen for a more robust drink menu in a 1-tile space.
