What's for dinner?
Basically its "what you got cookin' 2.0" cos the original got zapped a few days ago. It doesn't have to be dinner, you don't have to have made any of the food, but its about our favourite time of the day because we get to do our favourite thing: enjoy some delicious munchable things (liquids are acceptable too)
Also what's the Cheese category? Can I put this under Cheese cos that would be really appropriate? It's going under Cheese I'm not changing my mind unless tpb say so. I haven't had dinner yet, but I've had lunch (which I didn't make) and it was totally delicious I had a chicken pita gyros: hummus spread on the pita, with white cabbage and carrots sliced really thin (grated?), lovely pile of shredded chicken, pickels, and homemade fries. Its the first time I've ever had one cos I just never got round to eating one. Why didn't I eat this sooner? |
That sounds delicious! Though given my vegetarian nature I would prefer falafel or something like that instead of the chicken.
As I had zero sleep (really, not kidding, I mean that) last night and only 45 minutes this noon and the kids were going crazy this evening we opted for delivery pizza and asked our neighbours to give us a recommendation for a good delivery service. I had a ruccola e grana pizza and it was so good! I wolfed it down though in the silent 15 minutes before the teething baby was calling my name again |
Some of that microwaveable minute pasta....but instead of using a reasonable sauce, orange sauce.

I had some chicken nuggets. I haven't been eating much due to my metformin dosage. Still, it was the first decent bit of solid food I had in the past couple of days.

Had some curry. The paste my dad used was made with shrimp which I can't stand but I couldn't taste it. I think he had added enough coconut milk and veggies to mask the taste.
Sadly I had to use rice with it which I know sounds great, but I'm diabetic and this limits the amount of rice I can have. The riced cauliflower went bad in the fridge even though it was only thawed for two days and this always happens when it comes in certain bags and it's really weird because everything else in them stays good. Ugh. |

Getting me to eat is a monumental task. This is due in no small part from the metformin's effect of suppression of appetite, especially from the fact when used in my issue, binge-eating, this worked too well.

Open style sandwich or what we would call a "håndmad" (directly translated as hand food). It is a less fancy version of "smørrebrød". |

I tend to have trouble feeding myself due to the suppression of my appetite from the metformin, so this means I run out of energy to stand and cook and in short, I find myself relying on my father's cooking and it's not bad, but I may want to talk to Dr. VB. |

^ That combo (mackerel in tomatosauce) is one of the worst things I've ever tasted. There are people who love it (how? ) but for me it's a hard nope. Mackerel on its own is okay in small quantities, and tomato sauce is fine as long as it's cooked right and not too "tomato-y" (the "raw" taste needs to be cooked out, and it must be spiced right), but the boxed combo? NopeNopeNopeNope! I came very close to throwing up... Not a big fan of pink fish either (salmon and trout - yuck!), and no sushi for me (uncooked fish? Yuck!). Mackerel and maybe another similar fish is fine in small quantities, but the taste can be somewhat overpowering so it's not something I eat often. But gimme (cooked) white fish and I'm good (cod, pollock, tusk, maybe a few other types - I'm really not good with fish names in English...). Fish and tomato sauce does not belong together (I've tried it on pizza - nope. I've tried it as a fish stew with white fish - nope. Maybe other people like it, but I don't.
As for "what's for dinner", I'm so tired of that question... I get it every day, and I'm all out of ideas. There are some ingredients I try to avoid for various reasons, which means the grocery shops are about as inspiring as a bag of frozen peas from fifteen years ago (and peas is one of the things I'm trying to avoid)... *sigh* Today we had chicken (re-heated in the microwave from yesterday - like chewing stale, week-old bread) and veggies (cooked today, and a bit tastier than the ones I made yesterday because I sliced the broccoli and fried the sides. Yesterday I just threw the boquets in the pan with the rest of the veggies, meaning they were heated uneven). |
This afternoon was, no joke, one of my favorite things about Thanksgiving aside from making and eating the main feast itself- making stock! For whatever reason, anytime I have a whole bird (anything from a little itty-bitty cornish hen all the way up to a 26 pound turkey) I always want to make stock from the leftover bits. It's just so good, it's like magic! You take all the leftover bits of the bird that no one wants to eat, you add the tops and greens from the vegetables you chopped up the day before, you throw in lots of the random spices that you have WAY too much of because you foolishly said "sure, I'll take all of grandma and grandpa's old spices" when your family was clearing out their apartment a few years ago, and then you cover it with water and boil it for an afternoon and strain it out, and it magically becomes an amazing stock base that's way better than any storebought chicken stock could ever dream of! Like I said, magic!

Life lessons: too much good stuff in any recipe will produce unsatisfactory results. I call this the Burrito effect. Don't put everything under the sun into a burrito.

Am a poor student again, so like pasta (fusilli is #1) with the randomly picked jar of sweet and spicy tomato sauce I found at Lidl this morning. Also I dropped like a spoonful of garlic and herb cheese spread into it cos I didn't have enough cash on me to also buy seasoning. So like it could have totally been better but its decent enough to eat without being miserable

Leftovers! Accidental sticky rice plus, correctly cooked mushrooms, courgette, and onion (and some smushed in garlic). I also tossed in 2 scrambled eggs in at some point. And for every serving of dinner I have, I also include 2 scoops of hummus cos its expring soon.

Broiled pork ribs.
usually I eat a hamburger for breakfast and dinner and an omelet for lunch. When I figured out that the "Zero net carb KETO" buns were raising my blood sugar above 200, I threw them out. A hamburger patty just by itself is a sorrowful dinner. So, switched to ribs and salad. First day of Lent is Wednesday, so the freezer is full of fish. One meat meal per day and it sure as heck isn't going to be a hamburger patty. |
Chopped up some mushrooms, some cherry tomatoes and one witlof (endive in french I think dunno the word in english) into a box, drowned them in some olive oil and apple vinegar and added like a teaspoon of black pepper and probably about a table spoon of "spicy" paprika (salt is spicier I swear). I've been playing with the crockpot and am learning that there are less good recipes for it than I had hoped. I tried a curry and it's rather meh, which is especially disappointing given how much it made. Oh well, meh curry it is!
*Update* Meh curry ended up being tastier after it had sat overnight. No adjustments to the seasonings were needed, but as it was all kind of just "slop", I added some cooked green beans. Served with yogurt (homemade) and a quick touch of Sirache sauce (I know, I know - different cuisine! But it's so garlicky and delicious!), it came out pretty good. Didn't even serve it over rice since it was a starchy curry with sweet potatoes and chick peas. Still, I have no plans to try this one again in the crock pot. I'll keep looking, so far I've found four recipes that I would try again, which is about half of the recipes I've tried so far. |

Pasta as my stomach is being a complete bitch over the stress of reading the financial section of the news on my smartphone.
As much as SSI beneficiaries like me are waiting with bated breath, I can't believe they screwed up the order to print it out in the first place. (No...think calmly, next month, you can buy pre-orders of Miitopia for the Switch and the Complete Series of Rugrats on disc. Nostalgia tripping should be worth it.) Lately, my eating habits are at best a nightmare. As much as I like cooking, washing dishes in junior year of high school broke me. I sang Tom Lehrer tunes from his album "An Evening (Wasted) with Tom Lehrer" to avoid ceiling high pile-ups in what I called "Dirty Dish Jenga". Tom Lehrer also invented a mnemonic song for the periodic table with a tune from HMS Pinafore and the Jell-O shot. |
"Christmas" dinner (well - kind of. We did the same kind of roast we usually have during Christmas, which was pretty tasty. I think I'm getting the hang of that one now)
And made chocolate covered mini mint eggs (well... more like roundish blobs than egg-shaped, but they're yummy - I've given up putting these into chocolate molds because it requires about double the amount to fill them and that's too much mint. They're much better when it's just the right amount and not a mouthful). Might make some more chocolates tomorrow, but not mints (got enough of those). |
Steak with béarnaise sauce, because I wanted to learn to make béarnaise sauce. It only occurred to me while I was eating it that I'm not actually sure I've had "correctly prepared" béarnaise sauce before, so while mine was certainly GOOD, I don't really know if I did it RIGHT.

I was out with my friends, at a pub (well, sitting freezing outside in our coats). Coronavirus is so weird, we were only allowed a 2.5 hour time slot, and had to put a mask on to pop in and use the ladies, the staff were eyeing me up each time like "well I suppose you can come in if you need the toilet....but we're watching you!" |
Had a chicken gyros at a terrace today. Should have added tomato to my diy gyros instead of the onions, but other than that it was pretty good

Grilled pork chops with a blue cheese sauce, roasted potatoes, carrots, mushrooms, and onions with rosemary and thyme, and fresh fruit. Delicious and able to be cooked almost entirely on the grill outside so I didn't have to heat my house up any more than it already got on this oppressively hot day!

I've been baking bread. It's amazingly delicious and what magic is this? Flour, water (or whey, because I've also been making yogurt), and salt and - voila! Something delicious and chewy is formed.

In honor of Skyrim's 10th anniversary yesterday (yes, I missed the actual date- my apologies to the Dragonborn!) I broke out my Official Elder Scrolls Cookbook and made an appropriate Skyrim feast- Jorrvaskr Mead Hall Companions-style meatballs, twice-baked potatoes with goat cheese and the Stormcloak seasoning blend, Khajiiti moonsugar glazed baby carrots, moonsugar/honey pudding for dessert, and of course, a bottle of wine that had a dragon on the label to drink alongside everything.

I've been meaning to bring life back to this thread, but real life is being...real life. That being said, I have found some motivation.
We're currently doing a pantry / freezer clean out so we can do a fall-ish restock. I have (6) 1 pound boxes of macaroni pasta that I need to do something with. It is going to be Pasta Salad Summer. Yikes! I have a hanging folder overflowing with recipes that we like or have yet to be tried. I've grown tired of this folder, so I'm transitioning my recipes to a disc system like what is used with Happy Planners. I've ordered a cover from Etsy and bought a new printer that prints on both sides of a sheet of paper so I can finally stop wasting paper and ink. I can do this with my current printer if I flip the paper over. Sometimes it works, sometimes it doesn't. On to what I made for dinner last night: Cauliflower Broccoli Ham Salad https://www.eatwell101.com/cauliflo...li-salad-recipe If you're vegan or vegetarian, leave out the ham and cheese. I didn't add the cheese as Dingus needs to cut back on dairy. You can replace the ham /cheese with something else or serve without either one or both. This recipe came with a recipe for a dressing. I didn't have any white wine vinegar, so I used the following: Italian Salad Dressing https://www.eatwell101.com/italian-...dressing-recipe This stuff tastes much better than the yuck in a bottle at the store and is a fraction of the cost. Instead of using mayo for the endless pasta salad I'll be making, I'll be using this salad dressing instead. Gone are the days of companies selling me expired canola-based mayonnaise. |
Boiled egg. Thats right, i just boiled 2 eggs. Normally, when you'd boil an egg and eat it without salt, it has a bland but not offensive taste. This time, somehow i messed up boiling the eggs and they tasted terrible even when i added salt. I even added a sauce. Still terrible taste. How did i mess up something as simple as boiling an egg? I bet even hard tack tastes better than this.

We had a massive bowl of mystery grain and veggies. I call it mystery grain because its not buckwheat but it sort of looks like it. No idea what the packaging said because even in the languages that I do know I didnt know what the words meant (11/10 language skills right there) but the parentals seemed to know what it was, and we didn't die so its all good. Anyway the veggies were broccoli and carrots with the standard old garlic and onion combo. Seasoning too, but I dont remember what mum's executive decision was.

Practiced making rice balls in the shape of baby bears. I made 9 with my baby bear mold.
I ate 7 of them and will eat the "survivors" when I am hungry again...🤣. The first time I made one with rice colored green with natural food dye powder, it resembled a Care Bear (Good Luck Bear) It turned out that 1 cup of uncooked Kokuho Rose rice and 1¼ cup of water in my rice cooker yields about enough rice for 9 bears. Better get some cookie cutters and nori punches if I want to up my presentation and use up my nori and mamenori. I am getting the hang of decoben cooking... ...But not to the point of "Iron Chef", over-the-top, replica of Venice with an opera singing prawn with a golden throat like the famous Enrico Caruso as it navigates the waterways on a gondola. |
Tried a new recipe tonight - quesadillas made with brie, arugula, sauteed mushrooms with rosemary, and a schmear of honey. Parsley sprinkled on top. The flavor was amazing.
Also made my second attempt at sourdough bagels. The last ones were tasty, but smallish and almost right. Not sure how these will taste yet as they are still cooling and we ran into one snafu with Alexa not setting the timer while they were baking. They are completely whole wheat and they were left to rise after they were shaped, whereas the first recipe I tried was a mix of rye and white bread flour and was allowed to rise before shaping into bagels. We rolled some in oats, some in white sesame seeds, and some in poppy seeds. Can't wait to try them! |
Oven baked chicken drumsticks (my "quick recipe" - I use frozen chicken, and make a "bbq" sauce to slatter on them with some butter, spices, a splash of mild chili sauce and a bit of ketchup), and scalloped potatoes on the side (the "lazy version" from a bag).
Takes about 10 minutes to prepare, and about 40-50 minutes in the oven, so it's quite chill. I never even bother to thaw the chicken... |

We made pizza- one had paprika, tuna, anchovies and onions, the other had more cheese, mushrooms and paprika. I ate some of both but picked out the anchovies cos thats waaaay too much flavour for such a small fish

Pasta and veggies
These long green beans I always forget the name of in English. Plus tomatoes, onion and some garlic (duh) and the basic seasonings. When the veggies were done I poured a carton of spicy tomato sauce over it and let that cook for a bit so it didnt taste like battery acid. The pasta was fusilli tricolore because colourful pasta is always more exciting. I mixed all of it together and really wanted to add cheese to it but the everyone said no so I only put cheese on my portion. Wimps. |

Well, in a little while there will be homemade pizza around here. I have to put it in the oven and that's it.
It takes: For the dough: 100 grams of baking flour (the yeast is already included) and one and a half/two natural yogurts. Of course, it has tomato and mozzarella. Then you can add whatever you want. Since way back in post 1 I said food could been made by someone else, it means restaurant food is included too! So I'm having my left over lunch which is: rice, chicken, mushrooms, leek, courgette, pineapple, bean sprouts (tauge??), and a sauce thats sweet but spicy but also kind of sour (but not like sweet and sour sauce). I could eat this any time all the time

Not dinner, but breakfast foods. This morning's breakfast is egg, scrambled in a single piece, like an omelet, served with baby potatoes and vegetarian sausages. I will probably throw in some cherry tomatoes into the potatoes as well. Also, baking whole wheat/rye/and white sourdough bread that will need to cool before being sliced. That will be tomorrow's breakfast.

Italian Tortellini Salad

Skipped the pepperoni as there is plenty of salt between the all the cheese and the Italian dressing. Cut back on the cheese. I added the cheddar, passed on the mozzarella. Didn't notice it was missing. I didn't add the basil simply because the store didn't have any. Next time I make this I'll be doubling the veggies. |

It is 83 degrees in the house. There is no way I'm making anything for dinner that is going to heat up the house further.
I wanted to make Antipasto Pasta Salad, but pasta requires boiling water. Since I'm not willing to do that right now, so I did a search for how to cook pasta in the Instant Pot. I know it can be done with spaghetti as I do it all the time, but I wasn't sure about things penne pasta which is what I use for things like pasta salad.
