Nasi Goreng, Rendang, and Sate are the most famous Indonesian food known internationally.
  • Nasi Goreng, literally means “fried rice” is stir-fried rice cooked with sweet soy sauce. Nasi goreng has long been considered an important staple of Indonesian cuisine. In 2018, it was officially recognized by the Indonesian government as one of the country's five national dishes. Nasi goreng is distinguished from other Asian fried rice recipes by its aromatic, earthy and smoky flavour.

Other than cooked rice, nasi goreng consists of at least three components; ingredients (e.g. egg, shrimp, meat, cooking oil), bumbu spice or seasoning (e.g. garlic, shallot, salt, chili pepper), and condiments (e.g. bawang goreng, krupuk, acar pickles, slices of fresh cucumber and tomato). The combination of spices and ingredients in different ratio creates myriad variation of flavours.

  • Rendang is well-done beef cooked in santan (coconut milk) and spices. Rendang is officially recognised as one of Indonesia's national dishes.
Rendang is rich in spices. Along with the main meat ingredient, rendang uses coconut milk and a paste of mixed ground spices, including ginger, galangal, turmeric leaves, lemongrass, garlic, shallots, chillis and other spices. Traditionally the term rendang does not refer to a certain type of dish.

The verb "merendang" actually refers to a method of slow cooking; continuously churning the ingredients in a pot or frying pan, on a small fire, until all of the liquids evaporate and the meat is well done. Traditional Padang rendang takes hours to cook. Cooking rendang involves pounding and grinding ingredients as well as slow cooking, and so is time-consuming and requires patience.

  • Sate (Satay) is skewered grilled meat, served in sweet soy sauce or peanut sauce. The earliest preparations of satay originated in Java, Indonesia. But has spread to almost anywhere in Indonesia, where it has become a national dish. Indonesian satay is often served with peanut sauce and kecap manis – a sweet soy sauce, and is often accompanied with ketupat or lontong, a type of rice cake, though the diversity of the country has produced a wide variety of satay recipes.

Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats, or tofu; bamboo skewers are often used, while rustic style of preparations employ skewers from the midrib of the coconut palm frond. These are grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings. Satay can be served in various sauces; however, most often they are served in a combination of soy and peanut sauce. Hence, peanut sauce is often called satay sauce. It is popular as street food and it can be obtained from a travelling satay vendor, from a street-side tent-restaurant, in an upper-class restaurant, or at traditional celebration feasts.
